BEET GREENS, CARROT, & HERB SALAD

I threw a salad together for lunch today, & it turned out delicious.  If you don't have these ingredients, improvise with what you have.  I have a 5lb bag of carrots I'm working on, & beet greens left over from roasted beets I made earlier in the week*, so I used them in this salad.  I like to make dressing in a bowl, then add all of the salad ingredients to that bowl.  

INGREDIENTS (1 serving)

Salad
3 leaves of romaine lettuce, washed/dried/torn
4-5 leaves of beet greens, cut or torn
1 green onion, chopped
1 carrot peeled & cut how you prefer.  I sliced mine into ribbons using a peeler.
1/2 bell pepper, sliced then cut in half
2 hard boiled eggs, sliced
Red Wine Herb Vinaigrette 
1 small garlic clove, mined
1 Tbsp olive oil
1 Tbsp red wine vinegar
1 tsp Dijon mustard
a pinch of salt
a pinch of sugar 
fresh herbs, chopped (I used 1 sprig of thyme, a sprig of oregano, & 2 basil leaves)

PREPARATION
1.  In a large bowl, add the garlic, olive oil, vinegar, Dijon mustard, salt, sugar, & herbs.  Whisk.  Taste & adjust as necessary.


2.  In the same bowl, add the lettuce, beet greens, carrot, onion, & bell pepper. Toss well to coat with the dressing.

3.  Add the eggs.  I like to toss them into the salad, but leave them on top if you prefer.  

SUGGESTIONS
If you don't like eggs, this salad would be good with meat, beans, or alone.   Kidney beans would be a delicious addition.  

*If you make a dish with beets, save the beet greens!  They are good in salads, & cooked, too.  Trim the greens from the beets, rinse well, & dry.  Store in a bag with a paper towel & they should keep about a week.  Add to salads, or saute with a little olive oil & garlic for a nutritious side dish.

  1. That salad sounds amazing! I think I would toss some quinoa in there just to shake it up a bit- and now I have something to do with my beet greens!
