DELICIOUS CABBAGE SALAD

Once in a while I buy lunch from a delicious Armenian restaurant.  The main reason I go there is to have a refreshing, light, lemony, cabbage salad.  Tonight I successfully recreated my favorite lunchtime side dish!  I made a gigantic batch because I plan to share. I used twice the ingredient quantities below.  

INGREDIENTS (Yield= 3 Qt)
1/2 head of green cabbage, washed, dried & shredded
1/2 head of red cabbage, washed, dried & shredded
1/2 onion, sliced in half & sliced thinly
2-3 cups shredded carrots 
1 bunch of parsley (regular or flat leaf), chopped
1 lemon, juiced
1/4 cup olive oil
1/4 red wine vinegar*
1/2 tsp sugar*
1/2 tsp salt
1 clove garlic, crushed or finely minced

*I was out of red wine vinegar tonight.  Inspired by my newest cookbook (The Improvisational Cook), I made a dressing with white vinegar & olive oil taste like red wine vinegar & oil.  I used 1/4 cup white wine vinegar & 1/2 tsp molasses instead of red wine vinegar & sugar. 

PREPARATION
1.  In a very large bowl combine the cabbage, onion, carrots, & parsley
2.  In a measuring cup, combine the olive oil, vinegar, salt, sugar.  Whisk together.  Taste & adjust the sugar/salt as needed.
3.  Add the lemon juice & garlic to the dressing & whisk together.
4.  Pour the dressing over the cabbage mix & toss well

This should keep for a few days.  Enjoy!

  1. hey i just discovered your blog. Love it. how you summarized the whole bodyrock.tv thing in one one page.
    And then i got to this page and glanced over blood type B recipes. 'nd im like yay....!!! cuz i really want to challenge my self so i have done a few workouts with Zuzana back in the day. and now i have started the feb 30 day challenge. so i done the test with embarrassing results i might add but i kind of forgave my self cuz i had a motorbike accident and i was at home doing practically nothing for like 6 weeks, so i managed to get myself psyched up to the 300 rep work out  but the thing is i was, and still am, so sore!!- just from the fit test!! that i actually started thinking this stuff is for 'O' blood type, and this is where you get in.
    Im a B! so maybe i can, after all. im just looking for something to slingshot me into it with out all this pain. and don't get me wrong i ain't a sisi- i used to be long distance running champ back in school, i know the pain, and i almost love it. but the pain i get from bodyrock is a good few levels beyond. i was thinking to try and design an introduction plan like a pre-beginer preparation.

    Maybe something like the warmup and cool-down u mention- daily and then every second day to slip in between the fitness test as a workout. do that for like 2 weeks and then progress to more hardcore stuff. What thinks you ;)?

    I'm glad you like the site, & how great that you're coincidentally a B too! As far as your fit test & pain, I think you should listen to your body. If you are too sore to move, take it easy! Your plan of doing a daily warm-up/cool down & fit test every other day isn't bad. You don't have to stick with only the fit test, though. I bet if you mix up which workouts you do you will notice that you feel stronger & less sore as time goes on. Also, the benefit of changing the workouts you choose is that you will be using your muscles differently The fit test is hard no matter what level you are at.

Hey Jessica,  I want to ask you a stupid question!  lol  Since you have that Cookbook about your blood type, does it say anything in there about how to find out what your blood type is, other than a blood test.  I mean, that sounded really stupid!  I don't know my blood type, but I know my husbands, and 2 of my three kids, is there a way to figure it out from there?  like some sort of DNA tree, like if both you and say your husband were B's then your kids could only be B's as well.  I don't even know if that made sense!  lol
